Trilogie – Frais Pétillant
State of the wine
Trilogie is the sparkling wine of Raspini Winery. It is made from the early harvest of all vineyards and brings together the entire work of the estate in one cuvée. Traditional bottle fermentation with a free, spontaneous character and proximity to the pét-nat idea.
Composition and origin
Cuvée of Pinot Gris, Pinot Noir and Pinot Blanc. The starting point is a small parcel of old vines in Breisach, Eckartsberg. Steeply inclined vineyard on volcanic rock.
Work in the vineyard and cellar
The first grapes of the year are Pinot Gris from this parcel. After harvest, they are crushed and left on skins and stems for five days.The spontaneous fermentation of this lot serves as a natural pied de cuve (starter) for the entire cuvée. After gentle basket pressing, fermentation takes place in old oak barrels. Short ageing in barrel, followed by second fermentation in bottle.
Style
A light, tension-driven sparkling wine with clear freshness. Fine, precise and easy to drink, without being decorative.
