Raspini Winery is a small, family-run estate based in Breisach am Rhein, in the heart of the Kaiserstuhl, one of Germany’s warmest and most distinctive wine-growing regions. Founded and led by Roberto Raspini, Italian winemaker by origin and training, the winery is rooted in a clear vision: producing classical, precise and long-lived wines through uncompromising artisanal work, without shortcuts and without ideology.

The Kaiserstuhl is a unique territory, shaped by volcanic soils, steep slopes and strong natural ventilation. These conditions allow for healthy grapes, balanced ripening and wines with natural tension. Our vineyards are worked entirely by hand, with great attention to soil life, biodiversity and long-term balance. Yields are deliberately kept low, not as a statement, but as a practical necessity to achieve concentration, freshness and consistency over time.

Viticulture and agronomic choices

All vineyard work is manual, from pruning to harvest. We avoid systemic products and focus on preventive, low-impact practices. The objective is not to follow a predefined model, but to read each vintage carefully and intervene only when necessary.

Harvest dates are chosen with particular attention to acidity and phenolic balance rather than sugar accumulation. This allows us to produce wines with moderate alcohol, structural tension and strong ageing potential, even in warm vintages.

Winemaking philosophy

In the cellar, the approach is deliberately restrained and precise. Fermentations are spontaneous, vessels are neutral, and interventions are kept to the strict minimum required to guide the wine safely through its evolution.

Skin contact, the use of stems and lees ageing are part of our toolbox, but never dogma. Each decision is made in function of balance, drinkability and longevity. The wines are not filtered or fined, and time is considered a fundamental ingredient.

The goal is not to produce wines that impress immediately, but wines that gain clarity and depth with air and with years.

Style and identity

The style of Raspini Winery can be described as classical in spirit, contemporary in
execution. The wines are gastronomic, dry, precise and textural, with a clear expression of the volcanic origin of the Kaiserstuhl.

Pinot Blanc represents the backbone of the winery: a variety capable of combining subtlety, tension and ageing capacity. Pinot Gris offers a broader spectrum of expression, from direct, mineral interpretations to limited skin-contact wines. Pinot Noir is approached with restraint and patience, privileging freshness, finesse and complexity over power.

Production volumes are intentionally small. Some wines are released in very limited
quantities and are conceived as “halo wines”: they are not designed to sustain volume, but to express the most complete interpretation of a place and a method.

A long-term vision

Raspini Winery is built for coherence rather than expansion. Growth, when it happens, is the result of continuity and trust, not acceleration. The objective is to remain a small, focused and independent winery, able to work closely with a limited number of partners who share the same attention to quality, time and authenticity.
